Next, you will have our Gold Medal Aged Gouda, aged 16-18+ months, natural rind, Dutch style and bursting with creamy nuttiness. Finally our youngest of the caves, our Tomme d’Evanston. Named after the neighborhood in which it’s produced, this Tomme will offer you a more mild taste but is ribbed with subtleties that will take it to the top of your list. Aged 6-8 months, this will be your best melting cheese in the box.
